Vegan Potato Soup with Smoked Tofu and Sesame Seeds

Warming, delicious and vegan: This potato soup is a energy boost for your body. Feel the grounding effect of the potatoe and enjoy the indulging umami taste provided by the smoked tofu. There's really nothing more to ask for!


Ingredients:


300 g potatoes

2 carrots

700 ml water

1 tsp vegetable broth or sea salt

1 onion

1 clove of garlic

1 tbsp vegetable oil

100 ml soy cream

400 g smoked tofu


For decoration:

Carrot greens

Sesame seeds

Salt & pepper



Preparation:


First, chop the onions and garlic and stew it in a pot with a bit of vegetable oil. Wash the potatoes and carrots, cut them into pieces and add them to stew. Meanwhile, boil 700 ml of water and add it to the pot together with 1 tsp of vegetable broth or salt. Cover it and simmer for about 20 minutes until the vegetables are cooked through.


In the meantime, cut the smoked tofu into small cubes and fry in a pan with a bit of oil, feel free to add some sesame seeds at the end.


Once the vegetables are soft, blend them with a blender. Add the soy cream and heat it up to boiling temperature once more. If necessary, season with salt and pepper.


Tip

To enjoy this delicious potato soup not only the next day, but also weeks later, fill it right into sterile canning jars. Freshly boiled and tightly sealed, it will keep for a long time.


Garnish

Serve in a soup bowl and garnish with the cubes of smoked tofu. If you have the carrot greens left over from the carrots, you can use this wonderfully for garnish or to make a delicious pesto. Season again with salt and pepper if you like.
